The “La Bousquetarie” collector’s box contains the book, signed and numbered from 1 to 15, in a bespoke case; two images, “Fleurs d’hiver” and “Jardin d’automne” — signed 16 × 24 cm fine art prints by Jérémy Veron — together with pieces of the château in apothecary vials:

• a herbarium from the kitchen garden, made with fresh flowers,

• earth and stone from the château,

• seeds from the kitchen garden, to plant at home,

• chilli ferments made by the chefs, to use at home

Come in through the garden, meet at the château. INTANGIBLE is the name of the restaurant opened five years ago by Emma Destruel (27) and Antoine Sallier (31), both formerly of the Alain Ducasse houses. It is a book of photographs that also holds fragments of stories and a few chosen recipes. It does what a book does: it fixes moments and a particular experience, it crystallises memories — those of two young chefs and of their remarkable place in the Tarn, which the photographer documented over four years.

JÉRÉMY VERON is a French photographer based in Paris. His work belongs to post-documentary practice, inscribing space, light and time while leaving the reader a degree of freedom in interpretation. He has always favoured long-term projects, and his intention for this first book was to dwell on the visual and narrative components of the place, to offer a work that is poetic and light yet full of meaning and symbol.
